Polysorbates are a large class of nonionic surfactants, which have the functions of emulsification, diffusion, solubilization and stability. It is widely used as emulsifier, dispersant, solubilizer and stabilizer in p-harmaceutical, daily chemical, food and textile industries. As an emulsifier, the change of high concentration electrolyte and pH value has little effect on its emulsifying ability, and it is a kind of excellent oil/water emulsifier.
